How to use Islands Hot Chocolate Powder
The best method for using chocolate powders in a busy cafe is to pre-make a chocolate sauce and store it in a squeezy bottle.
The recipe for this is as follows;
Add 400 grams of Islands hot chocolate powder to 500 mls hot water and whisk thoroughly, ensuring there are no lumps of dry powder left hiding at the bottom. Once thoroughly mixed, decant your hot chocolate sauce into a squeezey bottle and chill in the fridge before use. This job may be best done at night so your chocolate sauce is good to go first thing for your morning shift.
Use your pre-made sauce within two days of making.
For 8 oz drinks
Add 20 grams of pre-made hot chocolate sauce into the bottom of your cup, steam your milk and add a touch of milk to your hot chocolate sauce powder and give it a good stir, top with some dry chocolate powder through a shaker, and pour the rest of your steamed milk in with some lovely latte art .
For 12oz drinks
Exactly the same as the instructions above but use 40 grams of pre-made chocolate sauce.
For Iced Hot Chocolates
Add ice to your glass, tare your scales and squeeze 40 grams of pre-made chocolate sauce, add cold milk and give a good stir with a spoon or straw and serve.
